Ingredients
- 2 eggs
- 150ml natural yoghurt
- 150ml cider
- 250g plain flour
- 1tsp baking powder
- 50g caster sugar
- 3 Granny Smith apples, peeled & grated
- Zest of 1 lemon
- A little oil
Maple cider sauce:
- 150ml medium cider
- 100ml maple syrup
- Squeeze of lemon juice
Directions
- Mix the eggs with the yoghurt and cider.
- Sieve the flour and baking powder into a large bowl, add the sugar. Gradually beat in the egg mixture until smooth. Stir in the grated apples and lemon zest.
- Make the maple cider sauce by pouring the cider and maple syrup into a small pan, bring to the boil and cook until thickened and syrupy.
- Heat a little oil in a heavy based frying pan. Place spoonfuls of the batter into the pan, flatten them a little. Cook until golden then flip over and cook the other side. Serve the pancakes with the maple cider sauce poured over.
